Microgreens: Health Benefits


Scientific research now proves that these tiny seedlings harvested and eaten when they are just a few inches tall are a real superfood packed with antioxidants and other health promoting nutrients.


A 2010 study in the Journal of American society of Horticultural science reported that Microgreens harvested 7 days after germination have the highest antioxidant capacity. Antioxidants as we know defend your cells from damage caused by harmful molecules known as free radicals. Accumulated free radicals cause oxidative stress increasing diseases like type 2 diabetes, heart disease and cancer. By incorporating microgreens you can boost your blood levels with antioxidants and reap their many health benefits.


These edible seedlings are a superb source of Vitamin C, Vitamin K and Vitamin E. A protection from free radicals and loaded with Beta-Carotene these tiny plants reduce the risk of certain cancers and eye disease - its definitely a great addition to your nutrition toolkit.


Add them to a Salad / Sandwich or a Smoothie and you've just discovered a fun way of incorporating fresh nutritious produce in the cold months.


Ingredients

  • For the Salad:

  • 1 cup of microgreens

  • 1 blood orange, peeled and cubed

  • 1/2 avocado, peeled and cubed

  • 1/2 cup of shredded carrot or radish

  • 1/4 cup chopped walnuts

  • For the Dressing:

  • 1 Tbsp. cold-pressed olive oil

  • 1 Tbsp. lemon juice

  • 1 clove chopped garlic (optional)

  • A dash of salt and pepper


Directions

1. If your microgreens have some soil on them, give them a light wash and air dry them in a colander for a few moments. (They are very fragile so need to be handled with care).

2. Place them in a bowl and add the remaining salad ingredients.

3. Stir up your vinaigrette in a little jar and pour on top of the salad.

Microgreen Radish Smoothie:

2 ripe, frozen Bananas


1 cup of frozen Strawberries


1 cup of Radish microgreens


1/4 cup of Chia seeds


*Almond milk, Cashew milk, Soy milk, water etc. add until desired smoothie thickness has been achieved


Instructions: Combine all ingredients in a blender, and blend until smooth.
